⦁ 2 cups almond flour
⦁ 2 tbsp coconut flour
⦁ 2 tbsp psyllium husk powder
⦁ 2 tbsp cream cheese
⦁ 2 cups shredded mozzarella
⦁ 2 eggs
⦁ 1 tsp baking powder
⦁ Pinch of salt
⦁ 2 eggs (scrambled or fried)
⦁ 2 slices smoked salmon (or bacon/ham)
⦁ 2 slices cheddar or Swiss cheese
⦁ 1 tbsp cream cheese or mayo
⦁ Preheat oven to 180°C (355°F).
⦁ Melt mozzarella + cream cheese in microwave (or stovetop) until smooth.
⦁ Add almond flour, coconut flour, psyllium, baking powder, eggs, and salt. Mix into dough.
⦁ Roll dough into thin sheet between parchment paper. Cut into triangles.
⦁ Roll each triangle into croissant shape. Place on lined tray.
⦁ Bake 15–20 min until golden brown and flaky.
⦁ Let cool slightly, then slice in half.
⦁ Fill with scrambled eggs, smoked salmon, cheese, and cream cheese/mayo
