⦁ 4 egg whites
⦁ 1 tsp gelatin powder
⦁ Pinch of salt
⦁ 250 g (9 oz) pulled pork or shredded beef
⦁ 100 g (3.5 oz) shredded cheese
⦁ Optional: crispy bacon bits
⦁ Tortillas
⦁ Whisk egg whites with salt until slightly frothy.
⦁ Mix in gelatin powder.
⦁ Pour thinly into a hot nonstick pan, tilt to spread into a flat circle.
⦁ Cook 1–2 minutes per side until firm but flexible.
⦁ Filling
⦁ Warm pulled pork or shredded beef in a pan.
⦁ Add shredded cheese, melt together into a gooey filling.
⦁ Assembly
⦁ Place filling in the center of each tortilla.
⦁ Roll tightly like a burrito.
⦁ Slice in half for serving
