⦁ 200 ml heavy cream (35%)
⦁ 100 g butter
⦁ 3 egg yolks
⦁ 2 tbsp gelatin (powder)
⦁ A pinch of salt
⦁ Heat the cream in a heavy-bottomed pot over low heat until it reduces by about half.
⦁ Add the butter and stir until it melts into a smooth mixture.
⦁ Beat the egg yolks and slowly stir into the cream and butter mixture.
⦁ Add the gelatin (previously soaked in water) and stir until everything is smooth.
⦁ Pour the mixture into a small mold or a box lined with baking paper.
⦁ Place in the refrigerator for at least 4 hours to set.
⦁ Cut into cubes.
