⦁ 1 ½ cups almond flour
⦁ 2 tbsp coconut flour
⦁ 1 tsp xanthan gum (for elasticity)
⦁ 1 egg
⦁ 2 tbsp olive oil
⦁ ¼ cup warm water
⦁ Pinch of salt
⦁ 400 g ground beef
⦁ 1 tbsp olive oil
⦁ 1 tsp smoked paprika
⦁ 1 tsp cumin
⦁ ½ tsp chili powder (optional)
⦁ Salt & pepper
⦁ 1 cup shredded cheddar
⦁ ½ avocado (mashed with pinch of lime + salt)
⦁ Fresh cilantro leaves
⦁ Mix almond flour, coconut flour, xanthan gum, egg, oil, water, and salt → knead into dough.
⦁ Roll out thin between parchment, cook on skillet until golden both sides. Keep warm.
⦁ Heat olive oil, cook beef with paprika, cumin, chili, salt, and pepper until browned.
⦁ Mash avocado with lime juice + salt.
⦁ Assemble wrap: tortilla → beef → cheddar → avocado crema → cilantro.
⦁ Roll tightly, grill lightly for crisp finish. Slice in halves to serve.
